March Madness Munchies: steak fajita nachos

It’s March Madness and here in ‘basketball country’ this time of the year is just about a whole month-long holiday season. With all this basketball worshipping watching, I try to prepare great game time Munchies for my boys, my husband and my son. Yeah, I enjoy the Munchies too but DH accuses me of watching the game because of a party. Gah! Whuuuut evuh!

Anyway, I’ll bet you want to know about the yummy nachos I made.

Here’s what you’ll need:

Bag of tortilla chips
6 oz package of cooked steak fajita strips from that store that starts with a W and ends with mart
Salsa (I prefer the canned salsa in the Hispanic foods section of that same store)
Sour cream
Fiesta mix cheese, 1/2 cup or so
2 green onions, sliced (use entire onion)
Shredded lettuce
1 tbsp vegetable oil

Heat oil in a nonstick pan. Cube the steak strips and add them to the pan. Add the green onions. Cook until heated through and the meat begins to carmelize slightly.

Preheat the oven to 375.

Layer the chips and cheese in an oven proof bowl. Top with steak mixture. Add more cheese. Bake until the cheese is melted.

Add shredded lettuce to a serving platter. Carefully slide the nachos onto the serving platter. Add more green onions, a scoop of sour cream and a scoop of salsa.
